We are proud to present a degustation dining concept. We cater to the adventurous "foodie" who is eager to allow the Chef to cook the best market produce of the day. This is advantageous as a spontaneous Chef is the best kind!

Our food is inspired by the rich diversity of fresh Australian produce and influenced by the subtle flavours of the Middle East. To present simple modern Australian cuisine with a Middle Eastern twist, exploring unique, interesting flavours and spices in a relaxing and warm atmosphere.

Chef Ashraf Saleh

After many years spent working around the world as a chef, Ashraf Saleh opened COYA restaurant in Sydney in 2016, which presents simple, modern Australian cuisine with a Middle-Eastern twist, exploring unique, interesting flavours and spices in a relaxing and warm atmosphere. COYA is a multi award winning restaurant & Chef Ashraf Saleh is a 2 hatter chef with AGFG. In 2019 Ashraf published his first cookbook COYA French Middle Eastern Cuisine, and Ash's Spice Journey was published in 2022.

At COYA Chef Ashraf Saleh will demonstrate his drive and enthusiasm for combining herbs and spices from the East with the best ingredients from the West. As a gastronomic traveller Ashraf has been inspired by flavours of the world and he will show you how to combine some of his characteristic ingredients to produce delicious dishes!
